SOUTHERN FRIED CHICKEN DINNER CAKE
I honestly, don’t know where to start. This creation right here was inspired by Darius Cooks master piece. When I stubbled upon his video on Tik Tok, he didn’t break down a recipe, he just assemble the creation together. In that said, I had to make my own version, which I was so excited to do from scratch.
This cake is a spin on a southern classic dish and it makes your mouth water just looking at it. By the way, a typical southern dish has, fried chicken, mashed potatoes, collard greens, candied yams, corn bread, and more. I bet this will be your next birthday cake right?
There was an official name for this cake, so I decided to call it, Southern Fried Chicken Dinner Cake. You can also call it a Soul Cake or Mashed Potato Fried Chicken Cornbread Cake. The names fits well with the massive, epic work of art, doesn’t it?
Now, I know you are thinking, is that really cake inside? No, the cake layers itself is not made from cake batter, it actually make from cornbread. Crazy delicious right? You can make the corn bread from scratch or get your favorite corn bread mix. I always get, which one tastes better, and honestly the taste to me is the same. If you are going to buy the corn bread mix, you will need four boxes. You can find them at the Dollar Stores and they have a Vegan version too. If you want to make a small version of the cake, just buy two boxes.
The break down of the layers:
Now, I know most people skip the cranberry sauce during Thanks Giving, but its a game changer in this cake. Darrius in his creation used collard greens in the center, but I didn’t feel like going the the whole process of cooking it. In that said, cranberry sauce is the way to go if you don’t have the time! it is just as fire and oh so delish!! You can fine canned cranberry sauce at your local Dollar Stores. Now, if you want to try it with the collard greens, I recommend buying it a your local Black Own Restaurants. Before you place the collar greens in the center of your two corn bread layers, you need to make sure you drain the juice.
I couldn’t find fresh parsley, so I used dry parsley and curry leaves. If you don’t have curry leaves, you can leave that out. I was trying to me fancy with the leave since I have them growing in my back yard. Everything on this cake is from scratch, expect the cranberry sauce and the mashed potatoes. You can find instant mashed potatoes, again, at any Dollar Store. I like using this version because it glides better on the cake, like frosting would do.
Now for the recipe. I’m going to tell you the easy way on how make this while saving time and money.
- 1 Can of Cranberry Sauce =Dollar Tree or 99 cent Store $1
- 5 Drum Sticks, Fried Chicken = Buy it from your local Black Own Business or your favorite fried chicken spot.
- 1 box of Instant Mashed Potatoes=Dollar Tree or 99 cent Store $1 (follow direction on the back)/ Picked up mashed potato sides from local Black Own Business or your favorite fried chicken spot. Depending on the size, you may new a few.
- Parsley=Dollar Tree or 99 cent Store $1/ Fresh parsley you can find at any local store and if you are lucky, the 99 cent Store may have it in their grocery section.
- 1 Jar/Can of Gravy=Dollar Tree or 99 cent Store $1/Pick up from local Black Own Business or your favorite fried chicken spot
- 4 Boxes Corn Bread =Dollar Tree or 99 cent Store $1 (follow direction on the back)
The pans you will need to bake the corn bread need to be circle, 8″ by 2″. If you don’t have that, but you have iron skillets, thats fine. Just make sure it’s about 2 inches deep and 8 inches. For assembling the cake, it easier to make it on a cake stand or a cake turntable. However, if you don’t have either, you can just make it on a glass flat plate. Just make sure the plate is 10.5 inches. Follow the directions in recipes on how to assemble the cake.
*Note: I will be re-making this creation hopefully next month and doing a step by step video. I may try it will collard greens in the center**
