Boba Vanilla Cupcakes

This recipe has probably been on my mind to make for about eight years. I never got around to making it because when it comes to using Boba, it only stays fresh about maybe 20 minutes. I thought about making Boba from scratch, but honestly it’s very easier to get store-bought Boba. It’s cheaper and save a lot of money plus time at the end of the day.

This recipe is very simple, yet very tasty. I did make my own brown sugar syrup, because the store-bought boba one did not have enough. For my first Boba cupcake recipe, I wanted to make that actual cupcake very simple so I decided to go with a vanilla cupcake. If you want to be extravagant, you can definitely make milk tea cupcakes. Just let two black teabags soak into the whole milk for about 20 minutes.

Vanilla Cupcakes

Ingredients

  • 1 2/3 cup all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup unsalted butter, melted
  • 1/4 tsp baking soda
  • 3 egg whites room temp
  • 1 1/2 tsp baking powder
  • 1/2 cup whole milk, warm
  • 1/4 tsp kosher salt
  • 1 tbsp pure vanilla extract
  • 1/2 cup greek yogurt, room temp

Filling + Topping

  • 1-1 1/2 cup of Brown Sugar Boba
  • 4 boba straws cut in fours

Frosting


Directions

For the Cupcakes:

  • Preheat oven to 350 degrees F. Place cupcake papers in a cupcake pan.
  • Sift the flour, sugar salt, baking soda and powder into a large bowl, and whisk together.
  • Separate the eggs to only use egg whites.
  • In another bowl, whisk together the wet ingredients until combined.
  • Add the wet ingredients to the dry ingredients and mix until combined.
  • Add the batter evenly into cupcake papers, filling each paper with about 2/3 the way up.
  • Bake for about 18 minutes or until centers are springy to the touch.
  • When the cupcakes are cooling down, it is a perfect time to make the vanilla buttercream frosting
  • Once you have made the frosting, using a small teaspoon measuring scoop out a small, slightly deep hole in center of a cupcake.
  • Add the Boba to fill in the hole. Then using a piping bag, add the vanilla buttercream, thenpipe in a circular motion around the hole. Please make sure not to put any frosting on top of the hole.
  • Then add more Boba on top to fill in the center. Add the straws. Enjoy
