Good Morning Pancake Cupcakes

I always wanted to make these cupcakes back when I joined the viral mini pancake trend in 2020. These cupcakes are not only the cutest, but they are very scrumptious. The actual cupcake is banana, and the filling is a strawberry mousse topped with vanilla buttercream with four mini pancake stacks, garnish with strawberries and blueberries.

Just for the heck of it, you can definitely add some maple syrup on top. It’s a perfect way to start your day, hence that’s why I call them, Good Morning Pancake Cupcakes.

Let’s get started….

Yields 9 Cupcakes

Ingredients

Cupcakes

  • 1cups all-purpose flour
  • 1 large egg; room temperature
  • 1 1/2 ripe bananas; mashed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup white granulated sugar
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter; softened
  • 1/4 cup whole buttermilk; room temperature
  • 2 tbsp sour cream; room temperature
  • 1/4 cup golden brown sugar; packed

Garnish

  • 36 small pancakes
  • 18 strawberries; halves
  • 18 blueberries

Filling

  • 1/2 cup Cool Whip
  • 1/2 tsp of Strawberry Extract

Pancakes

  • Follow the Pancakes directions on your box recipe. Make 36 small pancakes on a flat top or pan.

Cupcakes

  • Position oven rack towards the center of the oven. Preheat the oven to 350°. Line one 12 cup muffin pans with 9 paper cupcake liners.
  • In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • In a large bowl of a stand mixer with the paddle attachment, beat the butter and sugars on medium speed until light and fluffy, about 3 minutes.
  • Beat in the eggs and sour cream until well combined. Beat in banana.
  • With the mixer on low, add in the flour mixture alternating with the buttermilk just until combined. Don’t over mix.
  • Fill each cupcake liner about 3/4 of the way full with the batter.
  • Bake for 18 to 20 minutes, rotating the pans and swapping oven positions halfway through, or until a wooden pick inserted into the center of a cupcake comes out clean
  • Allow the cupcakes to cool completely before frosting.

Filling

  • In a small bowl, mix to Cool Whip and strawberry extract together.
  • Add it to a small piping bag; no design tip needed
  • Using a small teaspoon measure, scope out the center of the cupcake, then fill the hole with the strawberry mixture.

Assembling Cupcakes

  • Add frosting into a piping bag and add a good amount frosting on top of each cupcake.
  • Then add four small pancakes (warm not hot) on top of the cupcake using three toothpicks as holders. Make sure that you push the pancakes all the way down, so there is a the three toothpicks on top is poking out the top of the first pancake.
  • On each to pick that is poking out, add one strawberry, and two blueberries, on top of those sticks.
  • Then add syrup on top; optional.
